These guys were so fun to make!! It’s been a while since I’ve worked with pastry dough. I have to admit, poptarts are a weakness, especially these Gluten Free Poptarts! I used to come home every day after school, plop one in the toaster oven and slather it with butter. Who’s with me!? …
Sweet Potato Muffins
This recipe is for cheat days only!!! I promise. I admit, I do have the occasional corn tortilla (non-GMO of course) and “real” oatmeal cookies. Technically, I’m not allergic to all grains, just gluten. Live a little why don’t ya!! I am surely glad I was able to “live a little” with this recipe. I used gluten free oats (not to be confused with oats not labeled gluten free) that were ground up into a flour. The texture of these Sweet Potato Muffins were heavenly. Thank you, Jesus, for gluten free oats!!!…
Sweet Potato Pizza Crust
Nothing beats the real thing…
But this Sweet Potato Pizza Crust sure ain’t gonna disappoint.
I’ve made my fair share of gluten free pizza crust (mostly ones consisting of cauliflower- my hands are so tired of squeezing the excess water out of cauliflower!!). This recipe has to be one of my favorites. …
Plantain Caramel Blondies
These babies remind of Ruby Tuesdays back in my younger years of working retail. Dessert after every meal!! And thank goodness there was a Ruby Tuesdays in the mall 🙂 I mean, I’m sure we could have found dessert elsewhere, but blondies!? Not blondies. …
Chia Pancakes
This one’s for the vegans out there. I tend to use gelatin as my go to “egg replacer”. But sometimes it’s just nice to switch things up. And these Chia Pancakes hit the spot! Annddd they’re super d-duper easy. You don’t even need to let the chia seeds soak!!

Plantain Buns
I need to forewarn you…I’ve had a slight plantain fetish during my down time. Trust me when I say this is just the beginning. Fortunately, my husband has fallen just as much in love with them as I have. I either have a ton of green plantains or a ton of gross black plantains sitting on my counter (with the fruit flies becoming more tempted every day to start their swarm). What kind of banana are you? (typical cashier response) No, I said what kind of banana are you?…
Coconut Oil Biscuits
I had a love for biscuits early on in life…I mean don’t we all? Especially if we’re from the south!
The best biscuits are from the south, more specifically, (my childhood summer hang out) Folkston, Ga. Thank you, Aunt Shirley, for setting my standards high at such a young age!
I was also very thankful to be her favorite 🙂 I got biscuits whenever I wanted. …
Rosemary Almond Crackers
These Rosemary Almond Crackers are super delicious!
It was that time of the month… you know, the time when you run out of “crispy nuts” and you need to make more, which requires soaking… And then you’re going to have all of these waterlogged (in a good way) nuts, just laying around. I had to find something to make with them!! What better then a cracker? This Polly sure does want a cracker!…
Buttercup Muffins
as you wish
My dear Buttercup 🙂 I love The Princess Bride!! Dear Westley!! Remember, ladies!? I dreamed of being Buttercup. And look at me now…he-he-he (I might have just whipped my hair slightly back and forth). Totally kidding. What I meant was…how am I not to buy an adorable buttercup squash? Anything with that kinda name has to be good, right? Or at least I’ll make it good. I promise these guys are worthy enough to be called Buttercup Muffins.

Coconut Macaroons
The absolute, most perfect plate of Coconut Macaroons. Aren’t they just lovely? The texture beats all too! Soft and fluffy. Gosh, that word always reminds me of Despicable Me. “It’s so fluffy!” Now if I could magically shape them into unicorns. Strange thought…I swear I’ve seen or heard or talked about unicorns way too much in the past several weeks. What is God trying to tell me? …
