Pecan Butter

This is one nut butter that you can’t live your life without trying.  Yes, it is my favorite.  It’s even more of my favorite when I accidentally over salt it.  It reminds me of the pretzel layer of the amazing strawberry pretzel salad recipe.  I can promise you this, that recipe will be coming to this site (gluten free)….stay tuned.  In the mean time I can relive each moment of my childhood summers with a spoonful of this fantastic stuff.

Coconut Butter

This little gem has become one of my favorite things in the world.  I, literally, can’t leave home without it.  Ask my family.  Anytime I travel to visit them, this is in hand.  The “butter” part is what had me sold.  If I had truly known what it was, I would have ran in the other direction (considering my life long hate towards anything coconut).  Thank goodness I’m uneducated and gullible.

Just like any nut “butter“, coconut butter (aka coconut manna) is just a highly processed (in a good way) version of coconut.  Makes sense, huh?  You can actually make your own (which is way more economical).  Just throw some desiccated raw coconut flakes in to a food processor for, like, forever.  My processor is on it’s last leg (from all the nut butters I make), so I prefer to buy it.

Date Paste

I really do try and limit my sugar consumption. You would never know based on my posts.  Date paste is a go to in my house for a sugar fix.  Dates are actually very high in sugar (63g per 100g to be exact).  Bananas have 12g of sugar. So, yeah, that does seem like a lot.  What makes dates so low on the glycemic index is the added fiber and protein that they’re packing.  This helps slow down our absorption of the sugar to our liver.  Now we won’t have that crazy, dreaded insulin spike.  Of course, if you are diabetic, don’t listen to me…listen to your doctor.  “They” do say sugar is sugar.  I choose to disagree.  Unlike sugar, dates offer many health benefits and are a power house of nutrition….

Homemade Almond Milk

It doesn’t get any easier then this guys…or cheaper…or healthier.  I mean, come on.  Once you read the recipe you will understand.  This Homemade Almond Milk is made to order.  It seems every one has their favorite nut butter, and along with that they have a favorite brand because of the texture or the  fact that you don’t need to stir it (I can not stand stirring the oil back in to nut butters!!).  That being said, everyone, grab your favorite nut butter and lets get ta cookin’.
