Coconut Chicken Curry

coconut chicken curry

I have a new favorite veggie:  Parsnips!!  I don’t know why I always shied away from  them.  I guess it was their alien-esk appearance to a carrot.  I’m weird like that.  I get freaked out by unusually large produce as well.  You?  Just me?  OK….

Orange Dreamsicle Fruit Dip

September 16, 2015 by Ashley Leave a Comment

One of my favorite childhood flavors?…Orange Dreamsicle!  Thanks to the Flinstone’s Push Ups and, of course, the Orange Dreamsicle Ice Cream Bar.  Mmmmm.  So, when I ran in to this little mouth fest in a bottle, I just had to get it.  Cara Cara Orange Vanilla White Balsamic seemed a perfect match for greek yogurt, and fruit!! And here we have Orange Dreamsicle Fruit Dip.  So tangy, yet sweet.  Quite Lovely.  My taste buds were quite happy 🙂

N’Oatmeal Cookies

September 15, 2015 by Ashley Leave a Comment

n'oatmeal cookies

Oatmeal Cookies without the oatmeal.  N’Oatmeal!  Makes sense.  I have been wanting to make oatmeal cookies for way too long, now.  I had a few delays.  First off, I wanted to figure out the perfect oatmeal replacement.  Secondly, I needed to overcome my last bit of coconut fear I had left.  Shredded coconut.  I’ve always been fine with the coconut flavor, but the texture just puts me over the top.  Uuugghh!!!  Until now.  I think the trick is to get the fine shredded, unsweetened version.  It’s healthier anyways.  Sold.  …

Pecan Coconut Butter

pecan coconut butter

I am proud to present Pecan Coconut Butter!!!  This recipe totally happened on a whim.  Despite the fact that my kitchen is always stocked with food, I usually don’t have spare time to make a snack.  I want something quick and convenient (and usually salty sweet).  This fit the bill.  Especially since I always have these three ingredients on hand:…

Pecan Butter

September 7, 2015 by Ashley Leave a Comment

This is one nut butter that you can’t live your life without trying.  Yes, it is my favorite.  It’s even more of my favorite when I accidentally over salt it.  It reminds me of the pretzel layer of the amazing strawberry pretzel salad recipe.  I can promise you this, that recipe will be coming to this site (gluten free)….stay tuned.  In the mean time I can relive each moment of my childhood summers with a spoonful of this fantastic stuff.

French-toast-sticks-2

Breakfast food is my absolute favorite.  Ok, ok…I know I seem to have a lot of favorites, but it’s a true story.  Living my life without pancakes and biscuits and french toast sticks makes me very sad inside.  That’s why I have made it my job to come up with recipes that bring me joy!!  I’m hoping, in return, they can bring you some joy too!  Comforts foods are just such.  For all of you food sensitivity suffers out there, I’m here for you.  I vow to bring you as many “legit” comfort food recipes as my “self” permits.  You are very welcome :).  Don’t be afraid to put your two cents in…what are some of your favorite comfort foods?  Leave a comment at the bottom of the page.  I have a very large list that I would love to add it too ;P…

My "Amazon Favorites" are truly so. I order and use everything on the list. I do happen to get a kick-back if you purchase something I referred you to. This is great because I can then pay someone to clean my house while I work hard on my very long list of recipes to experiment with.;P win, win.
